Yummy Macaroni and Cheese

Here is my recipe for macaroni and cheese from my middle school home-ec class.

2 cups uncooked pasta
1 quart boiling water
1 tsp. salt

2 Tbsp. margarine or butter
2 Tbsp. flour
1/2 tsp. salt
1 cup milk
1 to 2 cups shredded cheese (1 cup cheddar + 1 cup mozzarella recommended)

1. Bring water to boil in a large saucepan or small kettle. Add salt. Add pasta.
2. Stir occasionally. Cook uncovered at a fast boil for 7 or 8 minutes. Drain,
but do not rinse pasta.

3. In saucepan over medium heat, melt the butter/margarine.
4. Stir in flour and salt.
5. Slowly add milk so that butter flour mix doesn't lump. Cook and stir until thick.
6. Add shredded cheese and stir until melted.

7. Stir together cheese sauce and macaroni and serve.

8. Optional: After macaroni and cheese sauce are mixed, pour into a 1 1/2 quart casserole
dish. Bake at 350 degrees for 35 to 40 minutes or until heated through.

Makes 6 servings.
